Tennessee rib of beef

Ingredients

4 single joint beef ribs
8 table spoons of hickory BBQ sauce
4 table spoons of Tennessee glaze
1 25ml shot of jack Daniels
4 tea spoons of cracked pepper
Olive oil

Method

Place the rib of beef into a suitable mixing bowl. Add enough olive oil just to coat each piece of beef.
Add the cracked pepper to the mixing bowl as well as the hickory BBQ sauce and Tennessee glaze.
Mix all of the ingredients thoroughly as well as 250ml of cold water.
Place the beef ribs into a suitable baking tray with the cooking liquor, cover with foil and place into a pre heated oven at 180oc, for 2 ½ hours.
Turn the beef every 45 minutes.
Remove the foil, and cook for a further 15 minutes.
Great for serving with sweet potato mash and spicy roasted vegetables
