MOLE CHICKEN QUESADILLA

Ingredients
  • 4 tabs. Mole Poblano (5433)
  • Chicken pieces (4) – Thigh or Drumsticks are best.
  • ½ onion
  • ¼ tomato
  • 2 cloves Garlic
  • Salt & pepper
  • Small flour wraps (LW06001)
  • 4oz / 113g Mex mix (6600)

 

 

Instructions

Make a Chicken stock with the Chicken pieces, water, garlic, onion, salt and pepper. Simmer until chicken pieces are thoroughly cooked and beginning to fall from bone.

 

Remove chicken pieces from stock, strain stock and shred cooked meat from the bones.

 

Blend together Mole Paste and chicken stock to create mole sauce. Add sufficient stock to create a sauce similar in consistency to hollandaise.

 

Fill the wraps (corn or flour) with grated cheese and chicken and mole mix and fold to make a parcel.

Toast in a hot pan, oven or Panini machine.

 

Serving Suggestions

 

Use the same filling, but replace flour tortilla with our masa dough recipe. Form fresh tortilla into “pasty” shape.

Pour mole sauce over and bake for 15 minutes.

Sprinkle grated cheese on top of servings.
