RASPBERRY and PISTACHIO FRANGIPANE PIE

One of the joys of American food is that it combines the heritage of all the nationalities that make up the American people, and in the mixing pot of cultures, some wonderful flavour combinations have come to be popular.

Italian cuisine has influenced many dishes that are now thought of as classically American, and Funnybones Foodservice, the American and Mexican food specialist wholesaler, is delighted to add an Italian inspired dessert to its repertoire of sweet favourites from the USA.

Frangipane is a delicious Italian concoction of ground almonds, butter, sugar and eggs that makes a wonderful filling for a sweet tart,” explains Tom Styman-Heighton, Development Chef at Funnybones Foodservice. “We Brits took frangipane and added raspberry jam to create our own Bakewell tart, but the US twist on the flavour combination adds two of America’s favourite ingredients, pistachio nuts and shortbread.”

The new Raspberry and Pistachio Frangipane pie from Funnybones Foodservice combines sharp raspberry jam with a moist Almond Frangipane sponge flavoured with almonds, raspberries and pistachios. In true American fashion, the piecrust is made from shortbread rather than traditional shortcrust pastry, and the dessert is definitely an American-style pie – not a tart – with its deep dish filling finished with a sprinkling of roasted pistachios.

This pie is good served cold but it is really special if warmed. Simply pop it in the oven or microwave straight from frozen and serve as a dessert or as a piece of cake with tea or coffee.

Pre-portioned into 14 slices, the new pie is sold frozen, one per box. Once defrosted it has a shelf life of three to five days if covered, and is best stored refrigerated. If you are short of fridge space, it will store well in a cool air tight container once defrosted.
